Cinnamon Glazed Pineapple

Preparation Time: 10 minutes Cooking Time: 10 minutes Serves: 6 - 8

Glazed, golden pineapple is an easy dessert to make~ its stunning appearance belies its simplicity. This makes a change from fruit salad and fruit platters and actually takes less time to prepare.

It is a perfect finish to a BBQ or heavy meat meal. For a parev sauce puree strawberries, blueberries or raspberries to make a coulis or simply serve with parev ice cream or sorbet ~ mango would be a good choice.

Take care removing the foil from the stalks before you serve – it will be very hot.

Ingredients

  • 2 pineapples – cut into quarters lengthways, leaving the stalk intact
  • 2 tablespoons light muscavado sugar
  • 2 teaspoons ground cinnamon

To serve

  • 300 ml low fat natural yoghurt/ soya yoghurt
  • 1 tablespoon runny honey

Method

1) Remove the pineapple core and cut along the skin to loosen the flesh, reserving the skin shell.
2) Cut the flesh into pieces and return to the pineapple shell.
3) Wrap the green leaves of the stalk in foil. (Remove foil before serving).
4) Pre-heat the grill to its highest setting.
5) Mix the cinnamon and sugar together.
6) Sprinkle each pineapple quarter with the sugar mixture. Put on to foil-lined baking sheets.
7) Grill for 10 minutes until golden and caramelised.

To serve the stylish way: Serve with yoghurt and honey and dust the plate with cinnamon.
